From the archives: The most basic Leek and Potato Soup ever!
This one is a really easy one – it’s exactly what it says on the tin (so long as you have a blender – available for about £10 from most big stores).
Ingredients: Leeks, Potatoes
Extras: Herbs, Vegitable Stock, Onion, Milk / Cream
Chop the potatoes (peeled or unpeeled) into resonably small bits. Rinse well to remove excess starch and start boiling. Meanwhile, fry off the leeks in some oil, use onion here too if you wish. It is usually nice to add some chopped herbs (dried if you wish). When the leeks have softened up add some water (or stock if you want more flavours) and bring to a simmer, also adding the potatoes. Milk or cream could be substituted for some of the water to create a creamier soup. Simmer until potato is relatively soft. Liquidise the content of your pan and put back into a pan and leave to simmer until hot and you are ready to eat. Note – it is advisable to gradually heat up the blender before adding boiling hot soup into it else the plastic may start cracking!
